  • Cooking Instruction Validation Workshop at CAFRE`s Loughry Campus

    Date published: 30 January 2025

By Hayley O’Neill, Food Technologist, CAFRE

Previous Cooking Instruction Validation training food business attendees with Sharon West (CAFRE, Food Technology Technician) and Hayley O’Neill (CAFRE, Food Technologist).

Many consumers rely on the instructions for cooking or heating on food packaging. The College of Agriculture, Food and Rural Enterprise (CAFRE) delivers a workshop to provide guidance and practical advice for staff formulating cooking instructions.

Food safety legislation places the responsibility for accurate food labelling on the Food Business Operator. CAFRE’s Cooking Instruction Validation training facilitates the development of procedures and protocols which will ensure that products can be ‘safely’ heated before consumption.

Participants will learn to generate and validate their own internal cooking instructions. The aim is to remove any appreciable risk of food poisoning from any heat-resistant, pathogenic bacteria potentially present in the food.

Lead Technologist Hayley O`Neill explains: “There is a requirement in the food industry for businesses to complete cooking validations. This practical workshop will demonstrate how appliance calibrations and product validations are conducted to ensure that accurate cooking or heating instructions are stated on food product labels.”

Jemma Waters from Sofina Foods, Cookstown attended the workshop and commented: “I thoroughly enjoyed the Cooking Validation Training course held at CAFRE. I gained an understanding of the legislation surrounding cooking validations and the standards to be achieved. The course highlighted the importance of calibrating cooking equipment and the need to validate products before launch. The course was very practical and augmented the theory element, highlighting the importance of due diligence. The course also provided me with the opportunity to network with other New Product Development professionals. I apply the knowledge gained in my everyday work.”

If you are interested in Cooking Instruction Validation, visit the CAFRE website to secure your place on our next course on Friday, 14 March 2025. Visit the CAFRE website for information and to book.
